This morning, Rachel Ray and her doctor pal were putting Thanksgiving staples in head-to-head competition determining which is healthier. Mom and I were watching and I commented how much healthier my Nonna’s homemade cranberry relish is to either of the options presented. Then I had an idea… The Cranberry Parfait! This holiday treat would be an amazing addition to my menu (you know, when I get my coffee house).
Recipe:
Cranberry Relish Ingredients:
- 1 bag of cranberries
- 2 apples with skin
- 2 oranges with skin
- Walnuts
- Sugar to taste
Pulse the fresh fruit and walnuts in a food processor till all the bits are nice and tiny. Put in a container and add sugar to taste.
Parfait Ingredients:
- Greek yogurt
- Local honey
- Cranberry Relish
- Pumpkin Pie crackers
Layer the ingredients and enjoy!
